It's so cold and rainy, that combo makes for very wintery weather! West is having a couch nap here snuggled up to me. Thomas is watching Christmas movies, it's so fun to watch him watch the same ones we did growing up!
This morning we went to the annual Breakfast with Santa. It was so fun this year to watch Thomas. He really understands this year and was very excite to see him! We weren't sure how West would do but he did GREAT! He loved Santa, and wanted to go back after our turn was over. He is not smiling in his pictures but don't let him fool you, he really liked him!
Have you heard of squash hush puppies? I had not either until we started in the CSA. I really don't like yellow squash. Out of all the squash I have had this season it really is the most bland, except cooked on the grill, that's good! To make squash hush puppies you need to crate your squash, add onion if you want, garlic, salt, pepper, 1 egg and flour. Add other spices that you like, we're still experimenting with our recipe. Heat the vegetable oil on med and drop the mix in by the spoon fool. It will look gooey but will quickly firm up. Flip them over several times and then place them on a paper towel covered plate to soak up some of the oil. I am not a "fryer" person but these are fun and a treat. A great way to sneak in some veggies. The boys dip theirs in Ketchup and love them!
We were super duper blessed this week! Tommy's dad gave Tommy his old jeep. It has been nearly 2 years that we have been a one car family. There is a lot I like about having only 1 car and really only a handful of times we have needed a 2nd. Times are changing, Tommy's ride to work got laid off this week and Tommy is going back to school after the first of the year. Both of which will make a 2nd car such a BLESSING! The boys were the most excited of everyone. We had to move our carseats over so that they could ride with daddy. Our cup truly runeth over!
